That's the beauty of polytone. Just be sure to do a decent job of degreasing/de-waxing first. On the Fiberglas cowl - real easy to watersand the old coat and the old/new coats will melt into each other. Polytone behaves a lot like lacquer - very easy to work with on a re-do like you are planning.
Poilytone will not stick to fiberglass. If your old polytone is coming off the fiberglass because it was applied without a tacky epoxy primer coat underneath it, it will continue to do this and take the new coat with it.

If any doubts about your particular application or unique situation the best written authority is the book that Poly Fiber prints titled "How To Cover An Aircraft Using the Poly-Fiber System" Although it says covering - it discusses all aspects of their product uses including painting, re-painting, renovation, etc. on all surfaces.
