    Even in still air you can see the wing flex when when you wiggle the flapperons left and right.

    That's right. Rigid wings break. Similiar to 3/4 plywood vs 1x4 with each end on a chair. The 1X4 is bigger but the flexibility of the layers in the plywood give it way more strength.
